Hey guys! So one day my mom declared that she’s now a vegan (person that eats only plant based meals, no meat or fish or even meat products like milk or eggs) so I was like, maybe I could try being a vegetarian (I can have eggs and milk lol) and that’s how I began!
I didn’t take photos of each meal but I will share the recipe of the one I liked the most because it was borne out of “what will I do with these vegetables?” Lol
I call it “Vegetarian Efo Riro”
Ingredients:
Vegetable oil
Lettuce
Cucumber
Carrots
Onions
Pepper
Tomatoes
Plantain
Maggi, knorr, curry, thyme
Time: approx 40 minutes
Recipe:
Wash and cut vegetables. Boil the carrots till they’re soft. Using low heat, heat a pan with about 6 tablespoons of vegetable oil, then fry the onions for about 5 mins.
Blend the 4 chilies, 3 tomatoes and an onion. Pour the blended mix into the pan of frying onions and allow to cook. Spice with seasonings to taste. Once the pepper has cooked (you’d see bubbles) add the chopped vegetables and allow to simmer.
Parboil two handfuls of rice. Fry half a plantain.
Voila! Meal is ready 😊

Vegetarian pizza (cheese, tomato and red onions) & potato fries!

White rice, plantain, spicy sauce and lettuce and cucumber salad with a tablespoon of salad cream!
Vegetarian food can be fun you know!
